Chocolate Heaven


A beautiful Spring weekend and this time we have managed two barbecues without any downpours.  I had a special request from the kids for chocolate cupcakes - how can a Mother resist!!  To follow the recipe
For the printable version
Ingredients:
110g butter
110g light brown sugar
2 eggs, beaten
150g plain (all-purpose) flour
1 tsp baking powder
25g cocoa powder
110 ml milk

Method:
Heat the oven to 190 degrees C (170 - fan).
Beat the butter in a mixing bowl until soft and light.
Beat in the sugar and beat until light and fluffy.
Beat in the eggs, gradually until well blended.
Sift in the flour, baking powder and cocoa and fold in gently until incorporated.
Stir in the milk.
Spoon the mixture into the paper cases and bake for 25 mins until firm to the touch.

For the icing
Ingredients:
75ml cream
175g dark (plain) chocolate
50g butter
Decorations

Method:
Bring the cream to a boil in a pan.
Remove from the heat and add the chocolate.
Stir until melted and then add in the butter.
Continue to stir until the mixture is smooth and shiny.
Chill until it is thick enough to pipe.
Place in a piping bag and decorate each cake.
