Enjoying our little bit of summer

After weeks and weeks of rain we have had some long overdue sunshine this weekend and how we have all enjoyed it.  The kids have played contentedly outside, hubby has been happy because the barbecue has been put to good use and I have spent a good few hours in the garden.  Absolutely lovely!!
As a treat to myself for all the back breaking weeding and broken nails I made some lovely fresh scones.  This is my Mum's recipe, although I have changed it slightly to suit what was in my cupboard.  You can't get much more summery that a cup of tea, a scone with strawberry jam and slathered with our famously good clotted cream.

Ingredients :

60ml sunflower oil (1/4 cup)
1 egg, lightly beaten
Add enough milk to the above two ingredients to make up to 250ml (1 cup)

500ml (2 cups) All Purpose Flour
60ml sugar (1/4 cup)
4 tsps Baking Powder

Method:

Preheat oven to 190 degrees C (375 degrees F)
Mix egg mixture into the dry ingredients with a knife.
Pat out on a floured board until about 2cm thick.  **The less kneading and mixing the better.**
Cut into circles using a cutter.  Do not twist when removing the cutter as this will stop them from rising.
If you like a bit of colour to your scones, brush lightly with some of the egg/milk mixture which is probably still in the bowl.
Place on a baking tray and bake for 15 mins.
Serve with strawberry jam and cream.  Serves 6
